Swiss Chard with Walnuts, Lemon and Chévre

INGREDIENTS 1 TBSP organic olive oil 2 garlic cloves, minced 1 LB swiss chard, trimmed, chopped with stems separated from leaves 1/3 cup chicken stock or broth 4 TBSP chopped walnuts zest from one lemon 1 TBSP balsamic vinegar 2 OZ crumbled goat chévre cheese Salt and Pepper

Heat oil in a large skillet over medium heat.  Add garlic and chard stems, then add broth.  Cover and steam 3 minutes.  Add chard leaves, cook 2 minutes until leaves are wilted.  Stir in walnuts, lemon zest and balsamic vinegar.  Season with salt and pepper.  Remove from heat and top with goat cheese.

I like the Cycles Gladiator Pinot Grigio to pair with this recipe.  The recipe tends to lean towards being more bitter from the swiss chard and lemon juice.  There is some sweetness from the balsamic..adjust this to your liking.  The Pinot Grigio is a nice pairing as it offsets the bitterness with sweetness.  Together, they're like a ying and yang forming a nicely balanced symphony of flava.  Both recipe and wine sit around a 7 on the intensity of flava scale.  Enjoy!
